I have been working on cleaning out my garden and getting ready to till everything up and plant a cover crop. It really is time to get that done! I want the cover crop to get nice and green before the frost kills everything off. So today I harvested my winter squash and here are a few pictures and tips how to store them for the winter...

Put em' up for the winter
Tip: Do not cure acorn squash but put in cool storage right away. Curing only makes acorns stringy and reduces storage life.

My husband likes his meat and didn't care for the consistency of the soup, being pureed. So I made a few changes, adding cubed, fried chicken breast and pureeing only about half the veggies, leaving the soup chunky. Hardy and delicious!!!
